Beets are a paleo safe vegetable that can be prepared in many different ways. It grows naturally in many places around the world and can be eaten raw (if you are brave) or cooked with olive oil and other seasonings. These root vegetables are high in vitamin c when other important elements like Folate and vitamin B9.
Beet greens are also source of potassium and carotenoid phytonutrients which benefit ocular health and keeping the body hydrated with the correct electrolyte balance.
One thing to note is that Beets, and other root veggies, are high in carbs which can cause a problem for some people.
